Serif or sans
The serif bold has little feet on its letters. The sans-serif bold is plainer and sits closer to the bold you see in most social apps. Both include digits, so a date or a price comes out bold as well.
Bold italic
The two bold italic alphabets combine both effects. They are the loudest option here and tiring in bulk, so keep them to a word or two.
If the app has real bold, use it
A bold button, Ctrl and B, or double asterisks in Markdown all keep your text as normal letters. That is better for search, spell check and screen readers. The characters here are for the places that give you nothing else.
The catch
The weight lives in the characters, which is why it survives pasting almost anywhere. It also means the text is no longer plain letters.
Questions
Why doesn't bold text show up when someone searches my name?
Because the letters are different characters. A search for ordinary letters does not match mathematical bold ones.
Which one looks most like normal bold?
Sans-serif bold, in any place that uses a sans-serif typeface.
Do numbers go bold too?
Yes, in all four bold styles.
